Sjef Martha Wiggins se "Chick-Syl-vain Sandwich" by Sylvain's in New Orleans begin met hoenderborsies sonder been wat 12 uur lank in karringmelk gebraai is voordat dit gebraai word.

Carl's Jr.'s Bacon Western Cheeseburger

Naglewe

Diens: die vinnigste drankie in my hand sedert ek in New Orleans was toe ek gaan sit.

Patat was patat. Almal hou van patat! 4/5

Hoofstroom:

Ek en my vriend vertrek gemaklik tevrede. Ek was beïndruk.

My man het die

So hoekom raas ek?

Hoenderlewer Crostini, Pappardelle Bolognese

COCKTAILS
* Ramos Gin Fizz (buite die spyskaart) - 4,5 sterre
Heerlik!

BEGINNERS

SLAAI
* Geskeer spruite (appels, grana padano, haselneute. $ 10) - 4 sterre
Baie interessant.

ENTERS
* Pappardelle Bolognese (grootvulling, tuisgemaakte durumpasta. $ 19) - 4,5 sterre

* "Chick-Syl-Vain " Sandwich (karringmelk gebakte hoenderborsie, tuisgemaakte piekels. $ 14)-4 sterre

* Gesmoorde beeswange (aartappelpuree, soet uie, aartappels, natuurlike jus. $ 26) - 4 sterre
Sagte beesvleis, sagte aartappelpuree. Wel gedaan.

* Daaglikse vis - 3,5 sterre
Dit het my nie so beïndruk as die ander geregte nie - om eerlik te wees, ek onthou nie eers veel daarvan nie!

DESSERT
* Sjokoladepoeding - 4 sterre
Dik en ryk, mooi en eenvoudig.

* Root beer float - 3 sterre

Ek was so teleurgesteld.

Ek gee hierdie plek 2 sterre. Ek bedoel. HARD. Ek kon skaars die kelnerin of my man hoor.

Ons was so ontsteld dat dit so was hoe ons laaste aand in New Orleans deurgebring het.

Ek dink ek moet eendag hiervoor teruggaan. Maar my tweede keuse was steeds heerlik.

Hierdie ete was 'n ware vyfster-maaltyd.

It was also nice to speak with Chef Alex and his sous Adam during and after the meal. Once again, this place is awesomeness.

The atmosphere here is amazing. I love walking back around the back to get in. It looked like they had a really sweet garden area that would be fun to sit in. For us, though, it was in the main room.

They have an excellent bartender who took pity on me and made me a virgin Moscow Mule. Dit was so heerlik. Our group ordered a variety of things, and I got to taste several. I can attest that the fried eggplant, pork shoulder and chick syl-vain were all wonderful. I ordered the pappardelle bolognese and it was perfect.

I would also like to take a second to acknowledge the service at this place. We made our reservations via OpenTable and I noted that we had a vegan dining with us. They called ahead that day to make sure that was still the case, and when we arrived we were told the chef had already planned out a vegan dish for him. That is the way you take care of a customer, and makes me want to go back here every time I go to New Orleans.

Catch-22: You're transported to a different world in Sylvain's back garden the servers rarely visit that world.

With lights charmingly hung across trees, the dining section behind Sylvain is very nice. The cocktail list is creative. Everything else was lacking.

The Louisiana Rice fritters, which I hoped would be a Cajun take on arroncini, were a soggy disappointment. The pappardelle bolognese does not deserve the praise it receives on Yelp. The scallops, to be fair, were good.

As for the service, still can't tell whether they forgot about us in the back or just didn't care enough to come check in, but everything took too long.

There is so much good food in New Orleans the garden at Sylvain doesn't justify spending a meal here.

Sylvain is a contemporary "gastropub" (I really dislike that term) in the French Quarter, right off Jackson Square. The restaurant itself is quite small, and dominated by the long wooden bar. There are only about 10 tables in the entire restaurant, so reservations are recommended on popular nights. The restaurant has a large selection of beer (local, micro, imports, etc.), wine, and an impressive set of specialty cocktails. I've had the Sazerac and the Old Fashioned, and they were impressive examples of craft cocktail science. I've gone to Sylvain with friends who've had Mules and Sidecars and what-have-yous, and they always raved about them.

The menu is small and focused, a set of charcuterie-style appetizers, a few salads, and 9-10 entrees. Here's the thing about Sylvain: I've been here three times, ordered a lot of food, and every single thing I've tried is AMAZING. The antipasti ($17) changes frequently, but on a recent visit it featured blackeyed pea hummus, house pickles (okra, beets, eggs), house spicy mustard, a selection of cured meats and cheeses, and a few crostini. Every single thing on that plate was brilliant. The shaved brussel sprouts with pecorino ($10) is a popular light dish, one of those alchemical transformations that makes something I had previously thought unappetizing (i.e. raw brussel sprouts) into something amazingly well-conceived and delicious.

A lot of people go for the pappardelle bolognese ($16), for a good reason. It's the real deal. Seriously one of the best single Italian dishes I've had in New Orleans, and Sylvain isn't even remotely an Italian restaurant. Perhaps the single best entree is the crispy duck confit ($21), a beautiful duck leg braised in fat and served with a bourbon mustard sauce, mashed blackeyed peas, and some kind of sprout or microgreen garnish. Words cannot begin to describe the unctuous, flavorful, textural richness of the duck leg. Holy crap. Sjoe.

The service is attentive and very professional, with a knowledgeable waitstaff who can describe the origin of the ingredients (many are locally-sourced and organic), and the atmosphere of the restaurant is warm, friendly, oftentimes loud and celebratory. It's like your favorite neighborhood bar, but one with a great chef laboring away out of sight. I give Sylvain my highest possible recommendation. It doesn't get any better in the French Quarter.

3. Muffulettas

Dit is die sandwich to have when you’re in New Orleans. For the uninitiated, this giant Italian sandwich starts with a muffuletta loaf—which is a round Sicilian sesame bread. It’s typically stuffed with olive salad, and thick layers of mozzarella, mortadella, salami, ham and provolone.

Where to go: Central Grocery & Deli claims to be the home of the original muffuletta and it swirls with the aroma of cured pork. Smack-dab in the center of the French Quarter, this grocery store is more than a century old. It was founded by Salvatore Lupo, a Sicilian immigrant famous for creating this indulgent Italian sammy. Pro tip: If you can’t make it down to New Orleans, Central Grocery & Deli delivers muffulettas in temperature-controlled boxes throughout the U.S.!

Guide to New Orleans

As you may have seen over the past few weeks and on our Instagram stories, Alaska Airlines recently launched its nonstop flight from SFO to New Orleans. We had the privilege of riding along on the maiden voyage. There were lots of festivities on the ground at SFO to celebrate, including a jazz band, King Cake, giveaways, and snacks at the gate, and after a smooth four-hour flight we touched down in NOLA to a water cannon salute.

We had a great long weekend exploring this classic Southern party town. We’d been given lots of recommendations by friends and were excited to explore everything that NOLA has to offer. First, a word of caution: NOLA is hot and humid. If you’re accustomed to the often frigid San Francisco climate, we’d suggest packing very lightly. Sarah wore light silk dresses and Clayton regretted not bringing more linen shirts.

We quickly learned that not only is there an amazing cocktail culture in NOLA, but there’s also the phenomenon of the cocktail to go, which you’ll likely not find anywhere else in the United States. At almost every bar, whether it’s The Ritz-Carlton or a dive bar, there’s a stack of plastic cups by the door, which you can use for your unfinished cocktail. You can also ask the bartender or server for a cocktail to go. After all, a gin and tonic sounds perfect for strolling around the hot, humid streets and admiring the architecture.

New Orleans also has some amazing antique stores. We admired numerous pieces on our way to dinner at various shops in the French Quarter, and saw an ad in the Wall Street Journal for an exquisite chest of Tiffany’s silver (at one of the same shops). Unfortunately, we waited too long to check out any of the shops. They are not open late, and they are not open on Sundays, so if you’re interested in antiquing, be sure to schedule around this.

Make sure to stop at The Sazerac Bar at the Waldorf Astoria hotel for cocktails. This classic New Orleans bar serves some of the best Sazerac and Ramos Gin Fizz cocktails in town (get the recipe below). Their bar snacks were exceptionally good and we loved the vintage vibe of their special etched Sazerac glasses.

Beignets are one of NOLAs most famous confections. We were told by numerous people that Morning Call in City Park is the place to go for non-touristy beignets. It’s cash only, and set in a beautiful park with lakes and trees. There are plenty of tables inside and outside. We got the impression that there is a pretty big rivalry between Morning Call and Cafe du Monde. If you’re interested in trying Cafe du Monde, we’d suggest going late at night. We walked by on our way back from dinner and there was no line at all.

There are so many places for creole food and fried chicken, but the one we were most excited to try is Willie Mae’s Scotch House. Located in the Treme neighborhood, this historic, old-school NOLA establishment serves fried chicken that is definitely worth the trip. If you’ve tried our fried chicken, it’s not like that. This fried chicken has a very light coating, with a crispy and spicy skin. The sides were mostly sold out because we showed up at the end of the day and right before the restaurant was closing for a few days for the NOLA fried chicken festival, but the macaroni and cheese we tried was amazing. If you are staying the French Quarter, we would suggest taking a car.

No trip to New Orleans would be complete without a walk around the historic Garden District, where you can admire some of the oldest and most exquisite mansions in the city. If you’re looking for breakfast, check out District Donuts, which serves different donuts every day. When we visited, we tried the Lemon Raspberry donut and the Samoa donut, which is filled with a light, fluffy coconut cream. We also sampled the basic glazed donut (similarly, we always judge pizzerias on the Margherita pizza). While we were in the neighborhood, we stopped into Turkey and the Wolf since it was named Bon Appetit magazine’s restaurant of the year and is only three blocks from District Donuts. It was a really good sandwich, with great housemade potato chips, but our personal opinion was that we’re not sold on the Bon Appetit award.

One brunch spot we loved was Sylvain. This adorable little gastropub has an old-school vibe, great brunch cocktails, and really good food. We tried the chilled Louisiana Gulf shrimp, a small order of biscuits and gravy, and the cleverly named Chick-Syl-Vain sandwich. (see more from our visit here)

Some of our best cocktail, restaurant, and jazz finds in New Orleans included:

The Ritz-Carlton New Orleans. If you’re looking for classy jazz and dancing, we highly recommend checking out their bar. We stayed at the hotel and it was one of the best Ritz-Carlton properties we’ve had the privilege of staying at.

Maypop. This creole-Asian fusion restaurant was without question the best food we had in NOLA. (see more here)

French 75. Don’t miss this classic NOLA cocktail bar. Their collection of vintage glassware and amazing monkey lamps are worthy of a visit. (see more here)

Cane and Table. This restaurant is based on the history of rum trade. You’ll find everything from rare rum to small-production French wines, as well as a great dinner menu. (see more here)

Latitude 29. One of the best tiki bars in America, this is not your average tiki trash dive bar with headache-inducing drinks. Tiki scholar Beachbum Berry brings you the best balanced tiki drinks you’ll find in NOLA. (see more of their cocktails here)

If you’re looking for the best food and cocktails, in our opinion, you can’t go wrong with the above. Personally, we’d steer clear of Bourbon street, as the party scene isn’t really conducive to high-quality cuisine. To end our trip on a high note, we stopped into Central Grocery & Deli, the birthplace of the Muffaletta and brought home a sandwich. There’s a line, but the Muffalettas are pre-made and the line moves really fast. You can pick up a whole (huge) or half sandwich, and there’s space in the back to eat if you want to dine in. It’s also a full Italian market, so you can find Italian candies, pasta, and other treats to bring home.

We’ll be giving away tickets on Alaska Airlines soon. Make sure you sign up on our email list so you wont miss the chance to enter!

Chefs' Tasty Takes on Favorite Fast Food Sandwiches

Everyone's got their go-to guilty pleasure fast food sandwich -- chefs included.

— -- Everyone’s got their go-to guilty pleasure fast food sandwiches -- chefs included.

Toques across the country are making creative interpretations of fast food favorites, such as McDonald’s Egg McMuffin and Burger King’s BK Burger. See how chefs are going full-steam ahead with their own spins on the American classic.

McDonald's Egg McMuffin

The “Mc-Abigaile” Breakfast Sando Combo #1 at Abigaile in Hermosa Beach, Calif., is a cheffed-up version of the popular breakfast favorite. With American cheese, house-made fennel sausage, sauce, egg and tots, the upscale breakfast sandwich is a salute to the Golden Arches’ version.

Chick-fil-A’s Chicken Sandwich

Chef Martha Wiggins’ “Chick-Syl-vain Sandwich” at Sylvain’s in New Orleans begins with boneless, skinless chicken breast brined in buttermilk for 12 hours before frying. The buttermilk includes a homemade hot sauce of black pepper, Worcestershire sauce and a touch of salt.

Burger King’s BK Burger

The award-winning Acadia burger at Acadia in Chicago consists of a double-decker burger with house-made bacon, double crème gouda, garlic pickles and Chef Ryan McCaskey’s own variation of special sauce.

Carl’s Jr.’s Bacon Western Cheeseburger

At Plan Check Kitchen + Bar in Los Angeles, Executive Chef Ernesto Uchimura draws inspiration from his childhood culinary indulgence with a K-BBQ burger. This Korean-inspired version has "kimcheese" (gruyere cheese processed with wine and dried kimchi for seasoning), gochujang barbecue sauce, grilled pork belly, sesame salt, fried onions and sprouting onion. The burger nods to the American classic, while also paying homage to the restaurant’s new neighbor, Western Avenue in Koreatown.

Sandwich of the Week: Sylvain’s “Chick-Syl-vain” in NOLA - Recipes

We had recently visited New Orleans and spent a week in the French Quarter. A family member had given us a gift certificate for Sylvain and said one of her friends who is a "foodie" highly recommended it. We asked our concierge who grew up in New Orleans about the restaurant and she had never heard of it but there are so many restaurants you can't know them all. We are upset that the best reservation we could get was at 5:30. The first time we tried ti get a reservation all they could give us was the bar at 5:30, the second try got us a real table at 5:30. The general manager called after my last review and explained some of the things I was upset about. She said the tables that were still open when were left at 7pm( and had never been seated the entire time we were there were likely booked for the 7pm rush and they don't like to rush people out or make people who had a reservation wait so that's why the tables were sitting empty. I asked how far in advance we would have to call to ger a 7 or 7:30 reservation and Ali said 2 months. It must be a popular place but having to make a reservation that far in advance precludes visitors unless someone local is taking then there and knows how this works. I was also upset about being charged 15.00 for a glass of house wine. Ali explained that they don't have house wines, all their wines are specially selected and they look for hard to get, unusual wines. I think that's great-I just wish the waiter would have let me know there- wasn't a house wine and brought me a wine list or suggested something. I left thinking it was ridiculous to pay 15.00 for a glass of wine and now I wish I had known what kind of wine I was paying for. My other problem was the hostess who was less then friendly. She was not very friendly when we arrived 10 min. early. She checked us in without so much as a welcome and we didn't know where to go to wait because she did make it clear they didn't open for 10 min. and we would be called then. We kind of stood around with a group of 3 women who were also early. A menu, a wine list, a place to sit would have been nice. We didn't even get a welcome. Ali explained that its very hard to get the right kind of person for that job- they have to deal with all kinds of personalities, drunk people etc.. I don't know what to say other then we weren't obnoxious or drunk or difficult so I really understand the attitude. I hope Ali can find the right person for that job. Ali was very nice to call , she invited us back before the end of our vacation for drinks or dessert- she was very sincere. I would have liked to go but my husband had had enough and wouldnt go back. If we ever go back to New Orleans I'll give Sylvain another try. We'll make our reservation far in advance and try again- hopefully things would go better. I do appreciate Alis call and her kindness.

Thanks for the response! You have my email and number-- we look forward to having you back if you ever find your way back to New Orleans!

A Game Day in the Life of a New Orleans Saints Fan

NFL football has finally returned, and I’m not sure that anyone in this city that doesn’t play for the Saints is as excited as I am. I love the New Orleans Saints so much that when I lived outside of New Orleans for a year, I used to drive 900 miles each way to come in for the home games. One thing that being a long-time season ticket holder has taught me is that games here in New Orleans are so much bigger than just the game, they’re a celebration of all of New Orleans. Another is that tons of people stay in the French Quarter for Saints Sundays, even locals. So here’s a French Quarter-centric game day itinerary to squeeze all you can out of what could otherwise be a lazy Sunday.

Beignets from Café du Monde (Photo: Paul Broussard)

Early morning: I’m like a kid on Christmas for game day: up early and ready to go. Time to head to Cafe Du Monde or Morning Call for some beignets and coffee. A little caffeine and sugar is exactly what you need to kick-start what is going to be a long day.

Brunch-o-clock: It’s time for a real breakfast, or brunch rather, to hold you over for the first half of the game. If you’re anxious to get over to the Superdome, Champions Square opens at 9:00 a.m. Pay the minimal cover (which includes one free drink) and head into Club XLIV for great food prepared by Chef Scott Boswell, the chef and owner of both Stella! and Stanley. Speaking of Stanley, it’s a great place to grab brunch if you want to hang in the Quarter until game time.

Game time: Better be in the Superdome early, you don’t want to miss kick-off!

Saints fans at home in the Superdome. (Photo: Cheryl Gerber)

Late afternoon: Time to enjoy the victory! Looking to celebrate with a few great cocktails? Sainte Marie, Lucky Rooster and Victory Bar are all within a stones throw of the Dome so you can relive the glory of Drew Brees’ touchdown passes with Sainte Marie’s wide selection of locally-made spirits, Lucky Rooster’s exotic cocktails, or a classic cocktail with a fresh spin from Victory.

Early evening: Your stomach should be primed and ready for dinner at this point, so head back to the French Quarter. Try Sylvain for a menu featuring top-notch burgers, as well as the delectable “Chick-Syl-vain” Sandwich, Braised Beef Cheeks and Gulf Shrimp Pirlou or stop at Kingfish for their Seafood Cassoulet, Superette Cochon de Lait, Oysters Thermador, or the Shakshuka-Gator, which may sound intimidating, but is beyond delicious.

Late night: If you and your party are still going strong into the night, you may need a little something more in the way of game-day sustenance. No better place to find yourself than Killer Poboys in the back of the Erin Rose for some out of this world “new school” poboys. These poboys feature spices from around the world and local meats, all wrapped in tasty banh mi-style loaves. Of course, if you find yourself heading back towards Esplanade there’s no shame in ducking in to Molly’s at the Market to check out Dis Taco, the new sister restaurant to Killer Poboys, featuring “globally inspired, chef driven tacos.”

And with that, your celebratory Sunday has come to a close. Better head home and get some sleep we’ve got to do it all over again next week!
