Fry shallots pieces in oil for two minutes, and garlic, galangal, ginger, salt, cardamoms seeds, fry for 5 minutes, add soaked chillies and fish sauces.   5. Now add red curry paste (if paste is thick or dry use some water to make it paste like) fry for 5 minutes till you can see oil starts to separate.
  6. Now add onion shallots or onion petals, two whole Kashmiri chillis (optional to make It more spicy) sauté for a minute and then add Prawns.
  7. You can crushed peanuts now over prawns.
  8. Add coconut water or normal water as per availability, of course coconut water will give you best results..
  9. Then add chopped bird eye chillies, and then cook for 2 monies so that prawns are well cooked, don’t over cook them..
  10. Once water is 20% reduced and you can see prawns.. turn off the flame and add coconut milk and mix it well, add salt to taste..
  11. Add 1/2 lemon juice in curry.
  12. Serve with hot sticky rice or over cooked basmati rice. You can also use Thai Jasmin rice..

Shrimp cooked in red curry paste - Recipes

When I spotted some Royal Red Shrimp at my grocery store recently, I had to snap them up. They&rsquore really unique. They&rsquore found 430 fathoms deep (that&rsquos like half a mile) and are difficult, and thus not super-profitable, for fishermen to catch. They have a sweeter and more buttery flavor than other shrimp, a bit like lobster even. The coolest thing is that they&rsquore pink even before you cook them. See:

Because they&rsquore already pink, you can&rsquot use the usual method for determining if they&rsquore cooked or not. Normally, shrimp turn pink when they&rsquore cooked and that&rsquos a great indicator of their doneness. Instead, you have to watch for Royal Reds to turn more opaque and to curl up a bit. In the pan below, they&rsquove been cooking for about a minute. You can see that some of them have started curling and getting opaque while some are still a bit more jiggly. But if you&rsquore wondering, yes, these shrimp are keto like the ones you normally buy in the store.

I melted 2 tablespoons of butter over medium-low heat. Then I added 1 pound of the peeled and deveined Royal Reds (note that domestic shrimp like these are rarely sold already peeled and deveined so you&rsquoll probably need to do this yourself. Check out this great video for that over here,but note that the Royal Reds&rsquo veins are not always black. Sometimes they&rsquore more red, pink or coral.

I stirred the shrimp as they cooked. This kind of shrimp cooks more quickly than regular ones. These took only 2-3 minutes at the low temperature. As soon as they were all cooked, I immediately transferred them to a plate so that the heat from the pan wouldn&rsquot keep cooking them. I&rsquove read that Royal Reds are not at all good if over-cooked and didn&rsquot want to take the chance.

What else do you need to do? I added a sprinkle of salt and served them up. Isn&rsquot it great to taste something new in its purest way? Just butter and salt on these babies.
